This Anti-Inflammatory Detox Soup for Weight Loss is a metabolism-boosting, vegan recipe packed with turmeric, ginger, and vegetables. It’s the perfect clean eating meal to reduce bloating and reset your body.

Ingredients

1 tablespoon olive oil or coconut oil

1 large onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground turmeric (or 1 tablespoon fresh grated)

2 large carrots, sliced into rounds

2 stalks celery, chopped

1 large sweet potato, peeled and cubed

1 cup cauliflower florets

6 cups vegetable broth (low sodium preferred)

1 can (14 oz) diced tomatoes, undrained

1 teaspoon ground cumin

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

3 cups baby spinach or kale

1 tablespoon lemon juice (freshly squeezed)

Fresh parsley or cilantro for garnish

Instructions

1. Sauté the aromatics: Heat olive oil in a large pot. Add onion and cook for 5 mins. Add garlic, ginger, and turmeric; stir for 1 min.

2. Add the vegetables: Toss in carrots, celery, sweet potato, and cauliflower. Stir to coat.

3. Simmer the soup: Add vegetable broth, diced tomatoes, cumin, pepper flakes, salt, and pepper. Boil, then reduce heat and simmer for 20-25 mins until tender.

4. Add greens and finish: Remove from heat. Stir in spinach to wilt. Stir in lemon juice.

5. Serve: Ladle into bowls and garnish with parsley.

Notes

Storage: Keep in the fridge for up to 5 days or freeze for 3 months.
