This Cheddar Garlic Herb Potato Soup is creamy, cozy, and loaded with sharp cheddar, tender potatoes, and fresh herbs. The perfect comforting soup for chilly days.

Ingredients

2 tablespoons butter or olive oil

1 small shallot, diced

4 garlic cloves, minced

2 teaspoons fresh thyme leaves

1 teaspoon chopped fresh rosemary

2 pounds Yukon Gold potatoes, peeled and cubed

4 cups chicken or vegetable broth

1 cup whole milk

1/2 cup heavy cream (optional for richness)

1 1/2 cups shredded sharp white cheddar cheese

Salt and pepper to taste

Chopped chives and crispy garlic chips for garnish

Instructions

1. Heat butter or olive oil in a large pot over medium heat. Add shallot and sauté until soft.

2. Stir in garlic, thyme, and rosemary. Cook until fragrant.

3. Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are very tender (about 20 minutes).

4. Using a potato masher, mash some of the potatoes in the pot to thicken the soup.

5. Stir in milk and optional cream. Simmer for 5 more minutes.

6. Turn off heat and slowly stir in shredded cheddar until melted and smooth.

7. Season with salt and pepper to taste.

8. Serve hot, garnished with chives and crispy garlic chips.

Notes

You can use Russet potatoes if Yukon Golds aren’t available.

For a vegetarian version, use vegetable broth.

Omit cream for a lighter soup.

Add crispy bacon or pancetta for extra depth.

Leftovers thicken—reheat gently with a splash of broth.
