These Easy No-Bake Cherry Bourbon Balls are a rich, sophisticated holiday treat. They combine the warmth of Kentucky bourbon with sweet dried cherries and crunchy pecans, all without turning on the oven.

2 ½ cups Vanilla Wafers (Nilla Wafers), finely crushed

1 cup pecans or walnuts, finely chopped

1 cup confectioners’ sugar (powdered sugar), plus extra for rolling

2 tablespoons unsweetened cocoa powder

½ cup dried cherries, finely chopped

3 tablespoons light corn syrup (or honey)

1/3 cup bourbon whiskey (Maker’s Mark or similar)

Optional: Melted chocolate for dipping

Instructions

1. Prepare the Dry Mix: Pulse vanilla wafers and pecans in a food processor until fine. Transfer to a bowl and whisk in 1 cup powdered sugar, cocoa powder, and chopped cherries.

2. Add Wet Ingredients: In a small cup, mix corn syrup and bourbon. Pour over the dry ingredients.

3. Mix the Dough: Stir until crumbs are moistened and the dough holds together when squeezed. Add more syrup if too dry.

4. Form the Balls: Roll tablespoon-sized scoops into 1-inch balls.

5. Coat and Finish: Roll each ball in extra powdered sugar or cocoa powder.

6. Chill and Age: Refrigerate for at least 1 hour. For best flavor, store in an airtight container for 24-48 hours before serving.

Notes

Storage: Store in an airtight container in the refrigerator for up to 2 weeks or freeze for 3 months.

Substitution: For a non-alcoholic version, use apple juice with a splash of vanilla and almond extract.
