Ingredients

1 lb (450g) carrots, peeled and sliced

2 tbsp unsalted butter

1½ tbsp honey

¼ tsp salt (optional)

Fresh thyme or orange zest for garnish

Instructions

1. In a large skillet, melt butter over medium heat.

2. Add honey and stir until smooth.

3. Add carrots and toss to coat evenly.

4. Cover and simmer for 8–10 minutes, until tender.

5. Remove lid and cook for 2–3 more minutes until glaze thickens.

6. Serve warm, garnished with thyme or zest.

Notes

For a brown sugar variation, replace honey with 2 tbsp brown sugar.

You can roast instead of simmering for a deeper caramelized flavor.

These carrots can be made a day ahead—just reheat gently before serving.
