This healthy cookie dough bark is creamy, sweet, and packed with protein and fiber. It’s no-bake, freezer-friendly, and perfect for any time of day.

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 1/3 cup mini chocolate chips
  • Optional: 2 tbsp vanilla protein powder, crushed nuts, or sprinkles

Instructions

1. In a medium bowl, stir together almond flour, melted coconut oil, maple syrup, vanilla extract, and salt until a smooth dough forms.

2. Fold in chocolate chips and optional protein powder or mix-ins if using.

3. Line a small pan with parchment paper and press the dough into an even layer using a spatula.

4. Sprinkle with extra chocolate chips, crushed nuts, or toppings as desired.

5. Freeze for 20–30 minutes until firm.

6. Break or slice into bark-style pieces and store in freezer-safe container.

Notes

  • Store in the freezer for up to 2 months or refrigerator for 7 days.
  • Add espresso powder or cinnamon for a flavor twist.
  • Make it nut-free by using sunflower seed butter and oat flour.
