This No-Bake Greek Yogurt Jello Cheesecake is the ultimate lightened-up dessert. It combines protein-packed Greek yogurt with fruity gelatin for a fluffy, creamy treat that requires zero baking. Perfect for summer days or a healthy-ish sweet snack.

1/3 cup unsalted butter, melted

1 package (3 oz) Jello powder (Strawberry or Lime)

1/2 cup boiling water

2 cups plain Greek yogurt (2% or full fat)

8 oz cream cheese, softened

1 teaspoon vanilla extract

1/2 cup powdered sugar (optional)

Instructions

1. Prepare the Crust: Mix graham cracker crumbs and melted butter. Press firmly into a 9-inch springform pan. Freeze while preparing filling.

2. Dissolve Gelatin: Whisk Jello powder into boiling water for 2 minutes until fully dissolved. Let cool slightly.

3. Whip Cheese Base: Beat softened cream cheese, vanilla, and powdered sugar until completely smooth and lump-free.

4. Combine: Mix in Greek yogurt. With mixer on low, slowly stream in the cooled liquid Jello.

5. Pour and Set: Pour filling over the crust. Smooth the top. Refrigerate for at least 4 hours.

6. Serve: Run a knife around the edge, remove ring, slice, and serve.

Notes

Use room temperature cream cheese to avoid lumps.

Do not use non-fat yogurt; 2% or whole milk yogurt provides the best stability.

Store in the refrigerator for up to 5 days. Not recommended for freezing.
