Smashed Green Onion Potato Bombs – Crispy, Golden, and Addictive

Smashed green onion potato bombs are ultra-crispy roasted baby potatoes, topped with scallions and seasoned to perfection. An easy, crowd-pleasing side or snack.

Ingredients

  • lbs baby potatoes
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 4 green onions, sliced
  • Optional: shredded cheddar, Greek yogurt, chili flakes, lemon zest

Instructions

1. Boil baby potatoes in salted water for 10–12 minutes.

2. Drain and let dry.

3. Preheat oven to 425°F and prep a baking sheet.

4. Place potatoes on sheet and gently smash.

5. Drizzle with oil and season both sides.

6. Roast 20–25 minutes, flipping halfway.

7. Top with green onions for final 3 minutes.

8. Serve warm with toppings.

  • Use waxy potatoes like red or Yukon Gold.
  • Add chili oil or feta for flavor variations.
  • Reheat leftovers in an air fryer for crispiness.
