Tropical custard toast is a quick, fruity breakfast featuring Greek yogurt custard, thick bread, and juicy tropical fruit—all baked to perfection.

Ingredients

  • 2 slices thick bread (brioche or gluten-free)
  • 1 egg
  • 3 tbsp Greek yogurt
  • 1 tsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped tropical fruit (mango, pineapple, kiwi)
  • Optional: shredded coconut, lime zest, chia seeds

Instructions

1. Preheat oven to 375°F.

2. Whisk egg, yogurt, sweetener, and vanilla.

3. Press center of bread to create a well.

4. Spoon custard into well and top with fruit.

5. Bake 10–12 minutes until custard is set.

6. Top with coconut or zest and serve.
