1. Add cottage cheese to a large mixing bowl.
2. Sprinkle dry gelatin powder evenly over the cottage cheese.
3. Stir until the cottage cheese is evenly colored and the gelatin powder starts to dissolve.
4. Fold in the well-drained crushed pineapple.
5. Add mini marshmallows, nuts, and drained fruit if using.
6. For the cream cheese version, beat softened cream cheese until smooth, then stir it into the cottage cheese mixture before adding whipped topping.
7. Fold in thawed whipped topping gently until the salad looks fluffy and evenly mixed.
8. Taste and add a tiny pinch of salt if the salad tastes too sweet.
9. Cover and refrigerate for at least 1 hour, or 4 hours for the best texture.
10. Garnish with extra fruit, nuts, or whipped topping before serving cold.
