Ingredients

2 oz soju (or vodka)

1 oz kimchi brine (from good quality jar)

¾ oz fresh lime juice

½ oz honey simple syrup

3 dashes hot sauce (optional)

34 oz ginger ale or sparkling water

Ice cubes

Lime wheel and small kimchi piece for garnish

Gochugaru-salt rim (optional)

Instructions

1. If using a rim, mix equal parts salt and gochugaru on a small plate. Run a lime wedge around the rim of a highball glass and dip into the mixture.

2. Fill a cocktail shaker with ice. Add soju, kimchi brine, lime juice, honey syrup, and hot sauce.

3. Shake vigorously for 15 seconds until the shaker is very cold.

4. Fill your prepared glass with fresh ice. Strain the shaken mixture into the glass.

5. Top with ginger ale or sparkling water and stir gently once.

6. Garnish with a lime wheel and a small piece of kimchi on a cocktail pick. Serve immediately.

Notes

Use refrigerated kimchi for the brightest brine flavor. Adjust honey and hot sauce to your preferred sweetness and heat. For a batch, multiply ingredients and add fizz just before serving. Store unused brine in the fridge up to 2 weeks. This kimchi cocktail recipe works beautifully with both soju and vodka.
