Pistachio Jello Salad is a creamy retro dessert salad made with pistachio pudding mix, crushed pineapple, whipped topping, mini marshmallows, chopped nuts, and cherries.

Ingredients

1 box instant pistachio pudding mix, 3.4 ounces

1 can crushed pineapple in juice, 20 ounces

8 ounces frozen whipped topping, thawed

2 cups mini marshmallows

1/2 cup chopped pecans or walnuts

1/2 cup drained chopped maraschino cherries, plus more for topping

Tiny pinch of fine salt, optional

2 tablespoons chopped pistachios, optional garnish

Instructions

1. Add the dry pistachio pudding mix to a large mixing bowl.

2. Add crushed pineapple with its juice, removing only extra watery liquid if needed.

3. Stir for 1 to 2 minutes, until the pudding mix starts to thicken.

4. Fold in the thawed whipped topping until the mixture looks fluffy and evenly green.

5. Fold in mini marshmallows, chopped pecans or walnuts, and drained chopped cherries.

6. Taste and add a tiny pinch of salt if the salad tastes too sweet.

7. Cover and refrigerate for at least 1 hour, or 4 hours for the best texture.

8. Before serving, top with extra cherries and chopped pistachios if desired.

9. Serve cold.

Notes

Do not fully drain the pineapple because the juice helps thicken the pudding mix.

Drain cherries well so the salad does not turn watery.

For a richer version, beat in 4 ounces softened cream cheese before folding in whipped topping.

Add mandarin oranges or coconut for a tropical version.

Store covered in the fridge for up to 3 days.

Do not freeze because the texture can turn watery after thawing.
